My British Wife Makes  Gajar Ka Halwa | Happy Independence Day India

Happy 75th Independence Day India! Today we made Gajar Ka Halwa as Noah had it the other week at the Gurdwara but did not get any today, If you guys do try this recipe out please do let us know.

RECIPE:
Ingredients:
-2 cups of carrots
-50 grams of ghee (or butter if you would prefer)
-Handful of cashews/almonds (whatever nuts or extras you would like to add to the dessert - these are just the ones we chose!)
-1 cup of milk
-1 teaspoon of cardamom powder (you can also use some cardamom pods if you'd prefer)
-1/2 cup of sugar (you can also use a tin of condensed milk if you'd prefer this will make it very sweet and sticky)

Directions:
Firstly, cut off the ends of the carrots, peel them, and grate them into small pieces and set aside for later.

Next, crush up nuts and add 50 grams (half of the ghee) to a pan and heat up until ghee is all melted, and then add nuts and roast for around 2 minutes, before removing only nuts (leave ghee in pan), and set the nuts aside for the end. Then, add the carrots to the ghee in the pan, and fry for around 4-5 minutes.

Following this, add 2 cups of milk and a teaspoon of cardamom powder (or pods if you are using them), and cook for around 20-25 minutes on a high heat, stirring every now and again to ensure it doesn't stick, you will know this is finished once the milk has evaporated and the mixture is thick.

Next, add the rest of the ghee (50 grams) and the 1 & 1/2 cups of sugar, stir well and cook for around 3 minutes on low heat, just to ensure these flavours have absorbed into carrots. Add nuts in after this that you had roasted at the beginning, and stir and fry for around 2 minutes, and then it is all ready for you to enjoy!
